Peanut Butter Chocolate Brookies

Who here is a fan of brookies? Part chocolate brownie, part peanut butter cookie – these are actually to die for! Chewy, crispy and mindblowingly delicious!

115 grams smooth peanut butter

50 grams vegan butter

100 grams brown sugar

50 grams white sugar

100 grams almond milk

180 grams flour

1/4 tsp.baking powder

50 grams dark chocolate, chopped


150 grams butter

100 grams brown sugar

60 grams white sugar

140 grams flour

40 grams cacao powder

1/4 tsp. baking powder


For the peanut butter cookies, whisk all the dry ingredients (flour, baking powder and sugars) in a bowl. Add the rmaining ingredients (pb and butter should be melted) and stir to combine until a ball forms. Chill ball in the freezer for 1-2 hours.

Do the same with the chocolate part. First whisk all the dry ingredients, then, add the wet ones. Stir to combine and chill for 1-2 hours as well.

Make balls out of each of the doughs and roll them together tightly.

Place cookies in a baking tray lined with parchment paper and bake in a preheated oven at 200ºC (400F) for 13-15 minutes or until they’re golde. They will continue to cook oce they’re out of the oven though!
